Yay! It’s soup season :)
This one is clean, healthy, delicious and dairy free. I hope you get a chance to make it!
Red Pepper & Tomato Soup
2 or 3 red peppers
6 ripe tomatoes, chopped
1 tin of tomatoes (I used a block of my home roasted tomatoes from the freezer for extra flavour)
I onion, chopped
3 cloves of garlic, chopped
1/2 litre of stock
Sauté the onion, pepper & garlic in a tablespoon of oil for about 5 minutes. Add all the other ingredients, cover and simmer for 20 minutes.
Purée with a stick blender, or allow to cool a little before pouring into a food processor to whizz it smooth.
Season with salt & pepper and serve with fresh bread and lashings of butter :)
This soup is quite thick, if you’d like it thinner, just add more stock or freshly boiled water from the kettle.
