Lamb Chops with Mint Sauce – Easy One Pot Meals

These quick and easy Lamb Chops with Mint Sauce and Asparagus make the perfect one pot camping meal, that’s ready with very little effort.

I feel like lamb is often overlooked for quick meals at home or on camping trips.

But these juicy lamb chops cooked up in just 5 minutes, making this whole dish a winner on a busy night.

Whether that’s on the campsite at the end of a busy day exploring.

Or dodging the kids after school activities.

This quick recipe is a great one to have in your arsenal. 

And as we’re not serving it with any carbs, this also makes the perfect keto or low carb camping meal too.

Feel free to swap out the sugar in the mint sauce for your favourite keto friendly sweetener.

How to Prepare Asparagus

English, new season asparagus is a force to be reckoned with.

In fact, it is hotly debated that England produces the best asparagus in the world. 

As the season is so fleeting, be sure not to miss out on a single asparagus opportunity!

To cook your asparagus, simply snap the thicker end of the stalk off.

Hold the very tip, and bend.

Wherever it snaps is the part that you want to remove.

The waste part can be added to a stock pot, diced & used in stews, or composted.

I prefer my asparagus pan-fried rather than boiled.

It retains much more flavour and bite, and goes this beautiful vivid green colour.

Steaming would be a close second.

It only takes a few minutes to cook.

Feel free to remove a piece and have a nibble when you think it’s ready to check.

I prefer it with a little bite.

Just avoid overcooking it as it will become washed out and bland.

How to Make Homemade Mint Sauce

Whilst you can certainly use store-bought mint sauce with your lamb chops, making your own couldn’t be easier.

It only takes 3 ingredients, and tastes so much better for using fresh mint.

All you’ll need is:

  • fresh mint leaves
  • vinegar (I used red wine vinegar)
  • sugar

The amounts vary depending on personal choice. So start with the recipe below, and adapt to suit your taste.

Ingredients
  • 1 tsp oil
  • 4 small lamb chops
  • 150 g asparagus woody ends snapped off, then halved
Mint Sauce
  • 16 leaves fresh mint removed from the stem and finely sliced
  • 1 tsp sugar
  • 1 tbsp red wine vinegar
Instructions
  1. Preheat your pan.

  2. Add the oil, then add in the lamb chops and let sit for 2-3 minutes, or until they release from the bottom of the pan.

  3. Turn the chops when they are ready and add in the asparagus.

  4. Cook for 3 more minutes, or until the chops/asparagus are cooked how you like it.

  5. Meanwhile, make the mint sauce by combining the mint, vinegar and sugar and swishing around until the sugar is dissolved. Serve the chops and asparagus drizzled with the homemade mint sauce.
