One Pot Veggie Pasta

This One Pot Veggie Pasta is perfect when you’re pushed for time.

It’s full of fresh & healthy ingredients, and is on the table in less than 15 minutes!

And whilst this quick n easy one pot pasta dish makes the perfect midweek get-it-on-the-table-quick meal.

It also makes the perfect camping dinner, as the video below will attest.

 

One Pot Recipes

 

Anyone that has been within half a mile of my you YouTube channel will know that I H A T E washing up. 

So much so that the whole channel is dedicated to one pan camping recipes.

There’s only one thing worse than washing up, and that’s washing up when you’re camping :)

One-Pot Veggie Pasta

 

This one-pan veggie pasta is one of those magical dishes where you unceremoniously plonk all the ingredients into a pan.

Then simply pour in the water, pop on the lid, and allow everything to cook together. 

It’s kind of like a science experiment where you end up with perfectly cooked pasta, and a thick creamy sauce.

If you’ve never made a one-pot pasta before, you’re in for such a treat!

It’s important not to veer too far from the original recipe. 

But if you don’t like olives or can’t find capers, feel free to leave them out. 

However the tomatoes and mushrooms are accounted for with the amount of water used. So if you leave them out the timings may be out a little.

Ingredients
  • 170 g linguine pasta
  • 170 g cherry tomatoes , halved (about 14)
  • 50 g baby button mushrooms
  • 50 g black olives , halved (about 18)
  • 15 g capers , (about 2 tbsp)
  • 1 handful basil leaves
  • 1 tbsp olive oil
  • 2 tsp salt
  • 1/2 tsp pepper
  • 560 ml water
  • 50 g Parmesan grated

Instructions
  1. Put all the ingredients into a saute pan, or large saucepan. 

  2. Quickly bring to a boil, then reduce the heat a touch and gently boil with the lid off for 9 minutes.

  3. Keep stirring occasionally to prevent the pasta for sticking together, or sticking to the base of the pan.

  4. After 9 minutes, the pasta should be cooked and the liquid should have reduced into a yummy sauce.
