Chicken Wrap with Peach & Lime Salsa

This Chicken Wrap with Peach Lime Salsa recipe brings a beautiful fragrant zing to a simple lunch. It’s a classy, light and very refreshing meal that will wake the saddest of tastebuds.

If peaches are in season where you are, this light lunch should be firmly at the top of your kitchen bucket list!

It’s such a quick and easy to make, but fancy enough to serve to the fussiest of guests.

How to make a Chicken Wrap with Peach Lime Salsa

Let’s make the salsa first so the flavours have chance to make a little salsa love.

1/ how to make peach lime salsa

Choose peaches that are soft, ripe and juicy. And feel free to swap them out for nectarines if you fancy.

Rinse, dry and chop your peaches into small pieces.

Add them to a small bowl, along with the chilli pepper and spring onions.

Squeeze over the lime juice.

This will balance out the sweetness from the peaches and pair brilliantly with the chicken pieces.

Give it all a good stir and put to one side whilst you make the rest of the meal.

2/ cook the chicken pieces

Slice the chicken breasts into thin pieces and pop them into a bowl.

Pour over the oil and mix the chicken around to evenly coat in the oil.

Season the chicken pieces with garlic powder and salt, and stir once again.

Heat a frying pan over a medium high heat.

Add in the butter, followed by the chicken. Leave for a few minutes for the underneath of the chicken to get golden.

Flip the chicken and repeat until the chicken pieces are cooked through.

3/ build the chicken wraps

Swipe half a tortilla wrap with mayo, then top with the green salad leaves.

Place the chicken pieces on top of the greens, pouring any butter that’s left in the pan over the chicken too.

Finally, top the chicken with the peach lime salsa.

Fold the tortilla sides in, then roll each wrap up.

Slice in half and serve!

You can happily make this up to to 24 hours before you need it.

In this case before constructing the wrap I would allow the chicken to fully cool.

Then wrap firmly in cling film, foil or baking paper and store in the fridge until needed.

Ingredients
peach lime salsa
  • 1 peach - or nectarine
  • ½ lime - juice only
  • 2 spring onions - sliced
  • ¼ red chilli - use more or less to suit your taste
  • ½ tsp sugar
chicken wrap
  • 1 chicken breast - sliced
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp salt
  • 2 tsp butter
  • 2 wheat tortillas
  • 2 tbsp mayonnaise
  • salad leaves
Instructions
to make the peach lime salsa
  1. Chop the peach finely and add to a small bowl.

    Add the lime juice, spring onions, chilli and sugar.

    Mix well and allow to stand whilst you make the rest of the meal.

to make the chicken wrap
  1. Place the chicken pieces into a bowl.

    Add the olive oil and stir to coat evenly.

    Add the garlic powder and salt, then stir once more.

  2. Melt the butter in a hot frying pan, and add the chicken.

    Let it sit & sizzle for a few minutes, until the meat 'unsticks' from the pan and is golden brown. Turn over and brown the other side then cook for a few minutes until the chicken is cooked right through.

    If you are making the chicken wraps ahead of time, allow the chicken to cool before proceeding.

  3. Spread a tablespoon of mayonnaise on each wrap.

    Lay out a handful of salad leaves on each wrap.

  4. Top the salad leaves with the cooked chicken, and then the peach lime salsa.

    Fold the edges over, then roll up each wrap tightly.

    Cut in half and serve.
