Elderflower & Vodka Cocktail Slush

This Elderflower and Vodka Cocktail Slush is an elegant treat at the end of a long, hot day. It’s such a refreshing tipple, and comes with a heartfelt tribute too.

I recently learned about the devastating loss of fellow food blogger Isabella, from the blog Coriander Queen. Izzie was just 29 when she lost her battle with cancer and my heart breaks for her family and friends.

This Elderflower & Vodka Cocktail Slush is inspired by a recipe she published back in 2014, and is a tribute to her and her passion for life.

Her family friendly Mint and Elderflower Slushie recipe jumped out at me as a real summery treat, and I thought it would make an elegant and refreshing cocktail to share with you in her honour.

I pimped it with a shot of vodka and sipped it slowly as the sun set whilst sending her my love.

For once I have no other words, so instead I leave you all with this delicious cocktail recipe. I hope that every time you make it, you too will raise a glass to friends that were taken too soon.

Ingredients
  • 8 ice cubes
  • 1 sprig fresh mint
  • 1/2 lime juiced
  • 1 shot vodka
  • elderflower cordial
  • 1 teaspoon caster sugar

Instructions
  1. Place the ice, lime, vodka and a splash of elderflower cordial into a blender.

  2. Pulse until the ice is just crushed and 'slushiefied'.

  3. Taste and add the sugar and more elderflower cordial or lime juice as required.

  4. Blend for a few seconds to combine, then gently scoop into a highball glass and garnish with a sprig of mint.
