Sweetcorn Soup

After my recent marathon French Onion Soup making session (seriously, 9 hours?) I rebelled. A quick of frying of some onion & garlic and a bag of frozen sweetcorn and this yummy sweetcorn soup was on the table in 10 minutes. Hallelujah and Amen.

Lizzy joined me for this sunny bowl of lunch in her annual guise as my fairy tax~mother, submitting my tax return for me.

Last year I remember making her a very fancy lunch to repay her kindness, in the form of these Griddled Baby Aubergine and Goats Cheese Towers so I hope she doesn’t feel too hard done by with this super simple soup that took just minutes to knock up.

Lizzy, I promise I’ll put more effort in next year ;)

Ingredients
  • 1 teaspoon oil
  • 1 onion finely chopped
  • 3 cloves of garlic
  • 1/2 litre of stock or 1/2 litre of boiling water & a stock cube
  • 450 g bag of frozen sweetcorn
  • 1/4 teaspoon smoked paprika
Instructions
  1. Fry the onion in the oil until it start to looks transparent. Add the garlic, water/stock & sweetcorn and bring up to a simmer.
  2. Add the smoked paprika and blitz with a stick blender until smooth and creamy. Taste and season as necessary.

    Love sweetcorn soup, especially that this recipe is super quick. Those griddled aubergine and goats cheese towers look fab too.

    I am going to make this for my kids who adore sweetcorn. Love the smoked paprika. As for a friend who does your tax return?? You are a lucky woman indeed!

    Haha, this made me laugh Jane – that onion soup has registered deeply in your psyche. I’m rather liking this more instant version of soup – trundles off to check freezer.

    Great idea for a super-quick store cupboard/freezer soup! Never actually thought of making sweetcorn soup, but so going to now. My kids would LOVE this too, shall be pinning to good old Pinterest to remind me :)

    I can imagine the paproika works so well with the sweetcorn. I have a pot of this one too (from FBC5 !!)

      Smoked paprika is such a staple spice isn’t it? I love how it makes a meal taste meaty (like it has bacon in it) without adding any!

    tehehe love how the 9 hour gruelling session keeps popping up when u say soup! I am a great fan of sweet corn and sweet corn chicken soup is my abso fav I can eat it day in and day out and never tire of it!
