A refreshing, classy light meal that’s perfect for summertime.
Chop the peach finely and add to a small bowl.
Add the lime juice, spring onions, chilli and sugar.
Mix well and allow to stand whilst you make the rest of the meal.
Place the chicken pieces into a bowl.
Add the olive oil and stir to coat evenly.
Add the garlic powder and salt, then stir once more.
Melt the butter in a hot frying pan, and add the chicken.
Let it sit & sizzle for a few minutes, until the meat 'unsticks' from the pan and is golden brown. Turn over and brown the other side then cook for a few minutes until the chicken is cooked right through.
If you are making the chicken wraps ahead of time, allow the chicken to cool before proceeding.
Spread a tablespoon of mayonnaise on each wrap.
Lay out a handful of salad leaves on each wrap.
Top the salad leaves with the cooked chicken, and then the peach lime salsa.
Fold the edges over, then roll up each wrap tightly.
Cut in half and serve.
