Instructions
Preheat the oven to 180c/350f/gas 4.
Roll out the pastry and line a 10" quiche dish with it.
Spread the mustard over the base of the pastry evenly, then top with the chopped smoked ham.
Place the discs of leek over the ham, sprinkle with a tablespoon of fresh chopped tarragon and pour over the egg mixture.
Sprinkle a little more tarragon over the top and bake for 30 minutes.
