Gently fry the onion in the oil until softened but not browned
Add in the sweet potatoes, leeks and stock/water, bring to the boil then let simmer foe around 15 minutes or until the potatoes are soft and cooked through
Whizz in a blender until smooth and creamy and add boiling water from the kettle if it's a little too thick for your taste. Add salt and pepper to taste, just be careful with the salt if you've used a stock cube!
