Fry the sausages in the oil in a medium hot skillet or large frying pan until the skins are nicely coloured.
Remove the sausages from the pan. Add in the remaining fat and fry the cooked potatoes, sweet peppers and shallots until they are lightly coloured too.
Remove the vegetables too, turn the heat up and pour in the can of cider. Boil hard until the cider has reduced by half and has thickened a little.
Pop the sausages & veggies back into the cider, season with the salt, black pepper and mustard and serve.
