Lemongrass Infused Oysters
  • 3 tablespoons rice wine vinegar
  • 1/2 teaspoon fish sauce
  • 1 teaspoon sugar
  • 2 sticks of fresh lemongrass outer skins peeled away, and flesh finely chopped
  • 1/2 mild red chill thinly sliced
  • 2 spring onions thinly sliced
  • 1 teaspoon fresh ginger finely grated
  • 8 fresh oysters shucked
  1. Mix all the dressing ingredients together in a small bowl. 

  2. Shuck (open) the oysters and lay out the shell onto a platter of crushed ice.

  3. Drizzle a teaspoon of the dressing onto each oyster, and serve with the bowl so guests can add a little more if they chose.
