Slice each date and remove the stone if necessary.
Place in a food processor and blitz until you reach a date purée.
Add in all the other ingredients, and pulse until all is well combined.
Using a dessertspoon, scoop up regular sized amounts of the date mixture and roll between your palms into little balls.
At this point you have a perfectly edible truffle, However, to make them look extra special, you could roll them in cocoa powder, chopped nuts or more coconut.
Either serve at the end of a meal on a pretty little plate, or bag/box up to give as gifts.
