  • 255 g plain flour
  • 3 teaspoons baking powder 15ml
  • 1/2 teaspoon salt
  • 1 egg well beaten
  • 240 ml milk
  • 90 ml vegetable oil
  • 100 g extra mature Cheddar grated
  • 1 red onion medium sized finely sliced
  1. Preheat the oven to 190/210 fan/gas 5. Line a muffin tray with paper or silicone muffin cases.
  2. In a large bowl measure out and sift the flour, baking powder and salt.
  3. In a jug measure out the egg, milk oil and. Add in 3/4 of the cheese. Put 12 of the smaller onion rings to one side for topping the muffins, and chop the rest up. Add the chopped onion the jug of wet ingredients.
  4. Pour the wet ingredients into the dry and mix just until no dry bits are left. Spoon the batter into the muffin cases.
  5. Top each muffin with some a ring of red onion and sprinkle with the rest of the cheese.
  6. Bake for 20 - 25 minutes or until the muffin tops spring back when gently pressed.
  7. Leave to fully cool on a cooling rack before storing in an air tight tub or in the freezer.
